Average hung weight is 150lbs.

 

STANDARD CUT QUARTER OPTION 1

  • Sirloin steaks – 2 per package
  • T-Bone steaks – 2 per package
  • Top Round Steaks – 2 per package
  • Bottom Round Roasts – 3- 4 lbs
  • Sirloin Tip Roasts – 3-4 lbs or steak if both quarters chose the same cut
  • Ground Beef – 1 lb packages
  • Stew Beef – 1 lb packages
  • Soup Bones – bagged
  • Prime Rib Steak – 2 per package  or roast if both quarters chose the same
    cut
  • Chuck Roast – 3-4 lbs – can opt for ground
  • Cross Rib Roast – 3-4 lbs
  • Short Ribs – square cut
  • Brisket – Ground for ground beef – may be able to offer roast
  • Waste bones and fat – Optional
  • Offal – liver heart kidney tongue tail – Optional
