Average Price – $4000-$5100, depending on hung weight.

 

Average hung weight is 600lbs.

 

Typical Cuts from a Whole Beef:

  • Steaks: Option 1: T-Bone, Option 2: NY Striploin and Tenderloin, Option 3: T-Bone, NY
    Striploin, and Tenderloin
  • Top Round Options:  Ground, Steak, or Roast
  • Bottom Round Options: Ground or Roast
  • Sirloin Tip: You may select Steak, Roast, or a combination of both. You may also opt for
    Ground.
  • Prime Rib: You may select Steak, Roast, or a combination of both.
  • Chuck: You may select Steak, Roast, or a combination of both. You may also opt for
    Ground.
  • Short Ribs: You may opt for either Square or Maui Style ribs. (Non-Marinated)
  • Other Options – Stew Beef, Soup Bones, Waste (Bones & Fat), Offal (Liver, Heart,
    Kidney, Tongue & Oxtail), Brisket (Whole, Pickled or ground) Cross Rib Roast

 

SAUSAGE ORDER (Optional):

Johnston’s offers a variety of sausages made from our beef that are available for order
as well. There are 25lb batch minimums on all types of sausage, except beef sausage
(which is a 10lb minimum). When ordering, you may opt to add pork to any of the items
below. Please note that sausage can take extra time and may not be available for pick
up the same day that the rest of your beef is. Please contact Johnston’s directly for
more information. Payments for sausage orders are payable to Johnston’s directly.
